Its my understanding that hydrogen forms on the negitive , oxogen on the posotive plates ,when their next to another plate in the series . what forms on the end plates next to the plexyglass , steam?

You forgot to mark the outside plates!

Neg+neu+neu+neu+neu+neu+Pos

All plates produce HHO GAS, with the poles collecting hydrogen or oxygen. Steam should not be generated! If there is steam, then your device is wasting energy. Reduce the power draw in AMPS a little.
